Instructions to make The Barni Chaat:
- FOR THE BARNI: In a bowl add flour, 1/2 tsp salt, ajwain,2-3 tsp refined oil: make a soft dough adding water as and when required. Keep aside for 15 mins.
- Meanwhile heat oil in a wok for deep frying. Now take a small glass of steel and a steel spoon. Take small portion from the dough, paste it on the spoon & glass giving the dough their shape. And deep fry them one at a time.
- Once done barni will come out of the glass & spoon sparing their moulds. For the cover just take a small portion of dough roll it in circle & make a small handle in center & fry it (refer to the picture). Let them cool a bit so that they ll become crispy.
- In an another bowl mix moong daal pakora, curd, green chutney, tamarind chutney, cumin powder, salt, pepper, red chilli powder and give a quick mix.
- The last step is to take your Barni, add a moong pakora with some spiced curd, top it with a handful of malai sev & garnish it with beetroot juliennes. Can give your dish some colors adding a string of mint. Your All Edible Barni Chaat is ready to serve. Enjoy!
