This typical Crab Meat Apple Salad is the best healthy and tasty combination to any meal. Pile crab meat mixture into lettuce cups. Core apple, but do not peel, and slice in wedges. Garnish each salad with slices, sprinkle lemon juice over apple slices.
Instructions to make Crab and Apple Salad:
- Make Confit by slicing lemons very thin. In a pan add sugar and 150ml of water, stir sugar until dissolved. Add the lemongrass when the liquid boils. Simmer for a few mins and add the lemon slices. Poach for about 10 mins. Leave to cool on the side until needed.
- In a bowl mix apples, coriander, crabmeat, chilli, lemon zest, ginger, slices of lemon confit and mayonnaise.
- Vinaigrette- mix the oil, white wine vinegar and salt/pepper. Use a blender or whisk until it emulsifies. Keep to one side.
- Place shredded lettuce in a bowl and pour in the vinaigrette.
- On a plate place the lettuce and spoon the crab mixture, sprinkle seafood seasoning and add extra coriander.
Core and thinly slice the red apple into discs and arrange on the plate. Mix together the crab, celery slices and rocket leaves in a bowl, then. Fancy Crab, Apple and Pomegranate Salad. I don't eat Alaskan crab very often so this salad feels like a wonderful treat. Divide crab and place on top of cabbage and drizzle another tsp. or possibly two of vinaigrette over crab placing a claw meat portion on top. vinaigrette.
