  1. Put in the flour, yoghurt, bicarbonate of soda, salt, pepper and herbs in a bowl. Mix with a wooden spoon till roughly blended, then combine with hands till the it has turned into a shaggy dough ball. Then knead for 2-5 mins or until it turns into a nice dough.
  2. Shape the dough into an inch, thick disk and split into 8. Roll each bit into a ball.
  3. Heat pan. Roll out one of the small dough balls into 1/2 cm thick disk.
  4. Pop the disk into the pan and flip when bubbles start popping up and a little bit of steam comes up from underneath. When flipped wait for 30 secs and transfer onto a plate. - Repeat this step till all 7 are done.

Transfer to baking sheet and place in oven to keep warm. Continue this process with the remaining coils and flatbreads.
