  1. Get for Kachori Dough:
  2. Take 1&1/2 cup Maida
  3. Prepare 2 tbsp Rice Flour
  4. Get 1/2 tsp Salt

  6. Get 2 tbsp Oil for moyin
  7. Make ready As required Water for kneading dough
  8. Take For Kachori Filling -
  9. Prepare 1 Cup Urad Dal (Soaked and Coarsely Grinded without water)
  10. Make ready 1/2 tsp Asafoetida
  11. Prepare 1 tsp Cumin Seeds
  12. Get 2 tsp Coriander Seeds (whole)
  13. Get 1 tsp Fennel seeds
  14. Prepare 1 tsp Aamchur Powder
  15. Make ready 1 tsp Garam Masala
  16. Make ready 1 tsp Red Chilli Powder
  17. Make ready 1/2 tsp Coriander Powder
  18. Make ready 1/2 tsp Turmeric powder
  19. Make ready As per taste Salt
  20. Make ready 1/2 tsp Kasuri Methi
  21. Get As required Oil for frying dal

  24. Get For Serving kachori:

Steps to make Urad Daal Kachori:
  1. For making Kachori Dough -
  2. Firstly, In a large bowl combine together maida, rice flour, salt, Ajwain and oil as moyin.
  3. Now start adding water bit by bit and knead a dough same as that of Chapati Dough that is not very tight and not very loose. We need for dought to be a bit moist but not very soft neither too tight.
  4. Now apply some oil on the dough and keep aside for 20 mins. Meanwhile prepare Filling for Kachori.
  5. Kachori Filling -
  6. Soak Urad Dal for 4-5 hours. Drain the water and Coarsely grind urad dal in a grinder without adding water. Keep Coarsely Ground Urad Dal aside.
  7. In a pan add cumin seeds, coriander seeds and fennel seeds now start roasting it on a very low flame. Take it out in a mortar pestle and Coarsely grind it. Masala for kachori is ready.
  8. Now heat oil in a pan add Asafoetida (a bit more than usual because urad dal will not cause any gastric problem if it is combined with Asafoetida).
  9. Now add Coarsely Ground Urad Dal start stirring add Kachori Masala that was prepared earlier, add red chili powder, coriander powder, turmeric powder, Aamchur Powder and garam masala.
  10. Stir everything properly and add salt. Keep stirring till our filling is cooked. Do not cover or add water. We need masala to be completely dry.
  11. Now add Kasuri Methi and switch off the flame. Kachori filling is ready.
  12. For Frying Kachori—
  13. Heat oil in a kadhai. Once the oil is hot lower the flame on lowest heat.
  14. Take a small ball size portion from the dough give it a Katori shape with the help of your hands.
  15. Add 2 spoonful of kachori filling in the dough. Seal it and flatten it with the help of your hands. It should not be very thick or thin.
  16. Make all kachoris and add it slowly in oil. Do not increase the flame while frying the kachori. Keep flipping in between. It takes around 6-7 mins for one batch of kachoris to be done.
  17. Take out fried kachoris on a Paper towel.
  18. Assembling Kachoris–
  19. In a plate - Take kachori prick it in between and make a hole. Now add tamarind date chutney, add curd, add onions and lastly add barik sev.
