- Get 1/8 tsp Hing
- Get 4 cups Water
- Prepare 4 tbsp Chopped fresh coriander leaves
Gujarati Vaghareli Khichdi Using REDMOND's Pressure Smart Multicooker-Gujarati Khichdi The first dish I cooked in the smart multicooker was my favorite Gujarathi Khichdi (recipe below). Vaghareli Khichdi or Seasoned Khichdi is variant of Gujarati Khichdi. It is delicious and simple daily meal in Gujarat. Vaghareli khichdi means seasoned or tempered khichdi.

- Steps for preparing waghareli khichdi:-
- Wash and soak dal and rice for 20 minutes.
- Heat 3tbsp of oil and 3tbsp of desi ghee in pressure cooker over medium heat.
- Add 2 bay leaves,1 cinnamon stick,1 star anise and 1 big cardamom to hot oil.Saute for 1-2 minutes.
- Add 1tsp of mustard and 1tsp of cumin seeds to hot oil and stir.
- When mustard and cumin seeds starts to crackle add chopped onion and green chilli.(I chopped onion and green chilli together with hand chopper)
- Add 1/8 tsp of hing,1 tsp haldi powder,1 tsp red chilli powder,1/2 tsp garam masala when onion turns translucent and stir well.
- Add chopped tomatoes along with1/2 tsp salt mix well and cook until tomatoes turns soft and mushy.
- Now add 1/2 cup peas (I used frozen peas you can used fresh peas as well),1 chopped carrot,1/2cup beans,1cup capsicum,1 cup cauliflower florets to pressure cooker and mix vegetables well with masala.
- Drain water from dal and rice mixture,add dal and rice to cooker and mix well with vegetables.Saute for 1-2 minutes.
- Add 4 cups of water,and 1tsp of salt.Stir well.
- Cover the lid and pressure cook for 3 whistle.
- Garnish with fresh coriander leaves and serve with curd and ghee.
