I have shared two more versions which can be served with biryani. This is a tamarind based curry which can also be served with roti or pulao. Brinjal Curry is prepared in different ways in different regions. Here, we have followed the style which is used in Ambur which is famous for its Brinjal Curry.

Steps to make Brinjal Biriyani:
  1. Mix turmeric powder to brinjal.In a deep pan heat the oil/margarine and saute onion, ginger garlic paste until become golden.
  2. Add brinjal, jalapenos and stir fry for 5 minutes until brinjals are half cooked.
  3. Add tomatoes and biriyani mix and cook for 2 minutes in medium heat.
  4. Wash rice and add to the same pan with cooked brinjals and add 3- 3.5 cups water.Cook the rice in medium heat(lid closed) until its cooked well.
  5. Add cilantro and bellpepper and close the lid and heat for 5minutes lid closed.
  6. Mix well and serve hot!.Enjoy with any side dish you like.
