Steps to make Lemon Rice:
- Boil water in a wok and add the basmati rice after wash, make the rice 3/4th and drain, set aside.
- In a wok heat oil add mustard seeds, when splutters add curry leaves. When splutters add chana dal, urad dal, stir for 1 min.
- Add cashew nuts, peanuts. Stir until cashew nuts turn a little brown, add turmeric powder, ginger-garlic paste. Stir for 1-2 mins.
- Add asafoetida, salt and add cooked rice, add lime juice and stir for 2 mins.
- Add whole red chillies, stir. Add chopped coriander leaves and stir once. Set aside.
- Plate and add pickle, lime wedges, green chilli, yoghurt to enjoy.
