The ingredients needed to make Asafoetida chutney:
  1. Take 1/2 cup fresh coconut
  2. Get 2-3 dry red chillies
  3. Get 1 green chilli
  4. Make ready 1 Marble size tamarind
  5. Prepare 1/4 tsp hing/asafoetida
  6. Take 1/2 tsp mustard seeds
  7. Make ready 1 spring curry leaves
  8. Take 1 tsp coconut oil or any cooking oil
  9. Take As needed Water
  10. Make ready to taste Pink salt

The crunchiness of the tempering, flavor of hing, spiciness of the chilies or red chile powder combined with the creamy texture from coconut and cashews makes. Instructions to make Asafoetida chutney:
  1. In a pan add 1/4tsp oil and roast red chillies and asafoetida.(I took the rock hinga) or u may use hinga powder too.for a minute on low flame and keep aside to cool.
  2. In a mixie jar,add fresh coconut, tamarind,green chilli,roasted red chillies wdh hinga,salt and make a smooth paste by adding some water as per the consistency u prefer.
  3. Heat a tadka pan,add oil, mustard seeds,let it splutter and add curry leaves and switch off the flame and add this tadka on the ground paste,mix well.
  4. Hinga/asafoetida chutney is ready to serve wdh dosa,idlis,uttappams or appe.

This chutney doesn't need any chutney dal,so if you have fresh coconut at home,just proceed with the recipe of making hing chutney,popularly called in Konkani regions. Though the recipe uses more of coconut, they call it as Hing chutney only. Aayi makes two kinds of chutneys. One is hinga chutney and the other is alle chutney (Ofcourse she makes other chutneys also, but these two look similar). I never used to bother about which should go with what dish.
