- Chop the coriander and mint leaves.
- In mixer-jar combine, the mint leaves, coriander leaves, green chillies, tamarind pulp, jaggery,black salt, cumin powder, chat masala, red chilli powder, hing and grind to a fine paste along with some water.
- Check the salt and spices and adjust to suit your taste.
- In a bowl mix all ingredients for puri and make a semi soft dough of it with lukewarm water.
- Knead it for 5mins to form gluten.
- Cover the dough and keep it for 30mins.
- Preheat the oil for deep frying.
- Now roll medium size of roti by dough.
- By round cookie cutter or a cap of bottel cut shape of puri.
- Add one by one puris in pre heated oil.
- Fry it till golden brown from both side.
- Fry on low to medium heat to get that perfect crispness.
- Serve Puris with Pani and potato masala.
