It's a yogurt based thick, soupy consistency curry with chickpeas flour fritters or pakoras, seasoned with some aromatic Indian spices and served over steamed rice. Dahi ki Kadhi is made by preparing a lip-smacking gravy which is made primarily using besan (gram flour) and dahi (yogurt).

  1. Take 500 grams Yogurt
  2. Prepare 4 tbsp Chickpeas flour divided in 2 parts
  3. Prepare 2 Curry leaves
  4. Prepare 5 medium garlic cloves
  5. Take 1 1/2 tsp Turmeric powder
  6. Get 1 tsp cumin seeds (divided in 2 parts)
  7. Make ready 1/2 tsp Mustard seeds
  8. Make ready 3 tbsp coriander leaves chopped
  9. Make ready 2 medium onion, chopped in fine slices
  10. Take 1/4 tsp onion seeds (kaluanji)
  11. Make ready 2 each Green chilly
  12. Prepare 2 tbsp olive oil, extra virgin. divided
  13. Make ready Salt
  14. Take 2 pinch asafoetida
  15. Get oil for deep frying.
  16. Get 1/4 tsp baking powder

I leave the fresh yogurt on my kitchen counter for a couple of hours before using it to make kadhi. Gujarati Kadhi is a yogurt based sweet and spicy curry that is simple yet irresistible; it gets the sweetness from jaggery, the spice from cinnamon and the heat from green chillies and lends itself to a pure comfort meal. Kadhi goes well with any vegetable and especially when you have legumes as one of the main dishes. The yogurt-based gravy lightens the protein rich legumes, making you feel.

Instructions to make Yogurt (Dahi) Kadi:
  1. First grind the yogurt, 2 table spoons chickpea, 2 table spoons coriander leaves, half tea spoon cumin seeds salt 1 green chilly (if you want spicy use 2 chillies), 1 tea spoon turmeric powder and 3 cloves of garlic. Add a little water to it. It looks like a smoothie.
  2. Take a large skillet. Add oil and once hot add half an onion cut into fine slices to it.
  3. As the onions become transparent add 1 stock of curry leaves to it with the stock. Add the complete mixture from the grinder, you will need to add more water and salt as per taste as this will thicken up. Stir in short breaks. This is called the "Kadi". Taste n check if the consistency and the salt is ok. Close the flame once done.
  4. In a bowl take the remaining onion, add the remaining chickpea flour, baking powder, chopped coriander leaves, salt as per taste, remaining turmeric powder and very little water to make a thick batter. Mix well.
  5. Take enough oil for deep frying in a deep pan or skillet. Once the oil is hot, with a tea spoon leave scoops of this onion batter in the oil. Once these are golden brown remove them and keep aside. These are called bhajia. You can eat this bhajia with any chutney or with ketchup.
  6. Now put these bhajia's in the kadi.
  7. You need to season the kadi. Take 1 table spoon of olive oil in a small fry pan, once it's hot put the curry leaves, the remaining garlic cut into 4 parts of each cloves, cumin seeds, mustard seeds. Add all these ingredients together to the hot oil with the flames on low. Once it starts to sizzle add the asafoetida to it and close the flame and add this hot sizzling seasoning to the kadi and put the lid over the kadi. This is called a "Baghar"

South Indian Kadhi is a mild dish and is fairly easy to cook, which makes it a great family dish to throw together quickly. It is considered good to eat when you have an upset tummy as it is made with ingredients that have digestive properties. Palak Kadhi Recipe (Spinach Yogurt Curry) is a comforting curry made with fresh spinach leaves that is cooked first to remove the rawness and then pureed, it is then boiled along with a yogurt and curd based gravy.
