Instructions to make Fried yam and egg sauce:
  1. Feel yam and cut into your desired shape,rinse and add a pinch of salt
  2. Heat oil in a medium heat,add the yam into the oil
  3. Fry until its done
  4. In a pot, put oil and cut onions, stir fry for some minutes
  5. Add your grind attarugu and onion, grind ginger and fry
  6. Add maggi and stir
  7. Beat the eggs in a bowl pour into the frying ingredients and allow to fry for some minutes

Slowing pour the egg in a circular motion. Cover the pot and reduce the heat to low to allow the egg to "cake". You want the egg to form lumps in the stew rather than look mushy. Egg stew is the best thing that ever happened to Boiled Yam and Boiled Potatoes. You can also serve it with White Rice, Fried Yam, Fried Plantain or Potatoes.
