Elephant foot yam is of Southeast Asian origin. It grows in its wild form in India, Sri Lanka, the Philippines, Malaysia, Indonesia, and other Southeast Asian countries. In India this species as a crop is grown mostly in Bihar, West Bengal, Kerala, Karnataka, Andhra Pradesh, Maharashtra and Orissa. - Cut the yam into cubes and cook it with 3 litre water,1 tablespoon turmeric powder for 3 minutes and strain the water
- Take a pan add oil once get heat seasoning it with mustard then add onion tomato ginger garlic paste red chilli powder turmeric powder coriander powder with salt and fry well
- Fry well and then add tamarind juice,curry and coriander leaves close with a lid for deep fry
- Now and then stir and fry well,it will take minimum one hour for frying (flame must be in a sim manner). after that serve hot.

I often make this yam fry when I make sambar or rasam or even with dal.
