Mix all the spices and arrow root in a bowl and mix well until each arrowroot is well coated witht he spices. Get an oven tray and line it with foil. Lower the heat and let it cook until water has dried up. In kenya Nduma aka arrowroots are often boiled and eaten as a snack for breakfast with tea or mixed with other vegetables/meat to make a stew.
Instructions to make Masala nduma/ arrowroots:
- Peel the arrowroots, wash, cut into desired pieces and boil to softed.
- After boiling, drain all the watet and set it aside. Meanwhile heat up cooking for deep frying the ndumas
- Deep fry the ndumas till they become crispy. Drain the oil and set aside
- In a saucepan, fry the onions and tomatoes. Add in the tomato paste and all the spices and soysauce and stir to mix well
- Add in the 3 tablespoons of water to form a paste
- Add in the dhania, stir well. Let it cook for 1 min. Serve and enjoy
- Add in the deep fried ndumas slowly as you make sure they are coated in the paste
I took a different route and made Nduma chips, which.
