The ingredients needed to make Rice kheer:
  1. Prepare 2 teaspoons ghee
  2. Get 1/4 cup soaked and drained short grain rice
  3. Get 4 cups/ 1 litre warm milk

  6. Make ready 10-12 saffron strands
  7. Take 1/4 cup chopped assorted nuts

Made by simmering rice and milk in heavy, large bronze vessels for a long time, this rice kheer has a rich taste and attractive pink colour that comes out of the natural thickening of milk. Kheer is the original rice pudding, which became part of western cuisine through the British. I like this, but my husband and son didn't (too 'spicy' for them). Steps to make Rice kheer:
  1. At first, Soak saffron in 2 tablespoons of warm milk and keep aside.
  2. Now Heat a heavy pan. Add in ghee.and add dry fruits,and fry till golden brown. - Now stir in the drained rice for 1 minute on medium heat. - Now slowly add in the warm milk. - Let it come to a boil. Stir occasionally.
  3. Once it starts to boil, lower the heat and keep stirring often to avoid rice or milk sticking to the bottom and the sides.
  4. The milk will start thickening and reducing within 20 minutes. - After 20 minutes, just check the rice, it should be tender enough.
  5. Now add in the sugar, salt, cardamom and saffron milk. - Cook it for another 10 minutes. The milk should have considerably reduced. - Mash some rice with the back of the spoon if desired.
  6. Stir in the chopped nuts. - Switch off the flame. - Serve warm or chilled. - Add rose water and rose petals just before serving
