  6. when rice begins to get tender add second half cup of white wine stir till absorbed and the add minced garlic
  7. add ginger, paprika and Cayenne pepper. then salt to taste
  8. continue adding water till desired tenderness and serve.

In a large pot or Dutch oven, heat oil. Heat the oil and half the butter in a heavy, wide pan. Garlic is a key flavor in this risotto recipe! Olive oil - extra virgin is good, but light olive oils also work; Butter - salted. Vegetable stock - make your own vegetable stock or buy it.
