- Add olive oil in one pan and sauté mushrooms and onions in it (also add any meat like chicken or sausage if wanted). At the same time heat up a separate pan of the chicken broth.
- Add rice into mushroom pan and Sautee for 2 minutes.
- Add wine into main pan and stir until absorbed.
- Slowly add broth a half cup at a time and stir until all is absorbed.
- Add butter, Parmesan, balsamic vinegar, and any wanted spices. Stir until melted.
- Serve and enjoy!
This Italian dish is traditionally made with porcini mushrooms, however, shiitake and portabellini mushrooms are used here. The resulting risotto is delicious rich and well flavoured.
