The ingredients needed to make Chocolate Truffles:
  1. Get 200 grams favourite chocolate (milk, white or dark)
  2. Prepare 100 grams favourite jam/preserve
  3. Get 1 tbsp favourite port, whiskey or vanilla extract
  4. Prepare 1 cup cocoa powder (if using white chocolate use icing sugar)
  5. Make ready 1 dash decorations to top
Instructions to make Chocolate Truffles:
  1. Melt half the chocolate in a bowl over boiling water or on a low setting in the microwave
  2. Add the jam and liquid. stir until completely combined
  3. Put in the fridge for half hour until firm
  4. Dust your hands with cocoa powder and using a teaspoon, get a half golf ball sized amount and roll in your hands. if the mix is too loose then do your best then freeze for an hour then reball for a smoother rounder finish
  5. Melt the other half of chocolate. sieve the cocoa powder into a shallow bowl
  6. Roll the balls to lightly cover in cocoa. then using a toothpick to hold them, cover in melted chocolate and place spaced apart on a plate
  7. Decorate as you cover them before the chocolate hardens. leave to harden in a cool place but putting in the fridge will make them look dull
  8. I used dark chocolate with plum jam and mint extract and milk chocolate with strawberry jam and vanilla extract then covered both types in a variation of milk and white chocolate. I used coloured sugar, coloured balls, orange zest and cocoa powder to decorate
