I made this bread before but with white flour but since I'm on this health kick lately I thought I'd try it with whole wheat flour and what a surprise I had. The recipe is quite similar but different quantities and I used only whole wheat flour and it turned out beautiful and super yummy. For making whole wheat bread, wheat with high gluten and protein content is necessary - hard red or white (spring or winter) wheats have sufficient gluten and protein content. - Use a clean brush to rub egg yolk on the dough
- Preheat oven and bake for 30mins
- Remove bread from oven and rub a little butter on it while its still hot. Enjoy!
Use stone ground flour if available. This is a very big recipe, you may want to divide it in half. This whole wheat bread has a really good taste depending on your flour. I think King Arthur® is the best! This bread has cocoa and coffee in it.
