While potatoes are cooking, whisk eggs, milk, parsley, salt and pepper together in a medium bowl. Pour egg mixture over potato and onion, shaking. Meanwhile, scrub the potatoes and place them in a very large saucepan, with a little salt. When the hour is up, rinse the courgettes under cold, running water, squeeze out as much moisture as possible with your hands, then spread them out on a clean tea cloth and roll it up to wring out every last drop.

- Put potatoes in a bowl
- Drain (don't use oil from the courgettes, it's not fresh) and add courgettes
- Add olive oil, salt and white wine vinegar
- Mix and serve. I served mine with prosciutto :)
